For the MUSHROO Stuffing:

  • 1 cup MUSHROOs, finely chopped
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • 1/2 cup chicken broth
  • Cooking twine (optional)

Instructions

  1. Preparing the MUSHROO Stuffing: 
    • In a skillet, melt the butter over medium heat. Add the chopped onions and garlic. Sauté until they become translucent, about 2-3 minutes.
    • Add the finely chopped MUSHROOs to the skillet. Cook, intermittently stirring, until the mushrooms expel their moisture, and turn golden brown, about 6-8 minutes.
    • Stir in the breadcrumbs and grated Parmesan cheese. Cook for 2-3 minutes until the mixture is well combined and slightly crispy. Season with salt and pepper to taste.
    • Remove the skillet from heat and set the mushroom stuffing aside to cool.
  2. Preparing the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Lay the chicken breasts flat on a clean surface and season them with salt, pepper, paprika, and dried thyme.
    • Carefully slice a pocket into each chicken breast. Be careful not to cut all the way through. You want to create a space to stuff the mushrooms.
    • Stuff each chicken breast with the cooled MUSHROO mixture. Use cooking twine to tie the chicken breasts closed if desired.
  3. Searing the Chicken:
    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Add the stuffed chicken breasts to the skillet once the oil is hot. Sear for 2-3 minutes on each side until they turn golden brown.
  4. Baking:
    •  Pour chicken broth into the skillet around the chicken breasts.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
  5. Serving:
    • Once cooked, remove the skillet from the oven.
    • Garnish the mushroom-stuffed chicken breasts with chopped fresh parsley.
  6. Enjoy:
