Ingredients
Scale
For the MUSHROO Stuffing:
- 1 cup MUSHROOs, finely chopped
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
- 1/2 cup chicken broth
- Cooking twine (optional)
Instructions
- Preparing the MUSHROO Stuffing:
- In a skillet, melt the butter over medium heat. Add the chopped onions and garlic. Sauté until they become translucent, about 2-3 minutes.
- Add the finely chopped MUSHROOs to the skillet. Cook, intermittently stirring, until the mushrooms expel their moisture, and turn golden brown, about 6-8 minutes.
- Stir in the breadcrumbs and grated Parmesan cheese. Cook for 2-3 minutes until the mixture is well combined and slightly crispy. Season with salt and pepper to taste.
- Remove the skillet from heat and set the mushroom stuffing aside to cool.
- Preparing the Chicken:
- Preheat your oven to 375°F (190°C).
- Lay the chicken breasts flat on a clean surface and season them with salt, pepper, paprika, and dried thyme.
- Carefully slice a pocket into each chicken breast. Be careful not to cut all the way through. You want to create a space to stuff the mushrooms.
- Stuff each chicken breast with the cooled MUSHROO mixture. Use cooking twine to tie the chicken breasts closed if desired.
- Searing the Chicken:
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Add the stuffed chicken breasts to the skillet once the oil is hot. Sear for 2-3 minutes on each side until they turn golden brown.
- Baking:
- Pour chicken broth into the skillet around the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
- Serving:
- Once cooked, remove the skillet from the oven.
- Garnish the mushroom-stuffed chicken breasts with chopped fresh parsley.
- Enjoy:
- Serve the MUSHROO Stuffed Chicken Breast hot, drizzling some pan juices over the top for extra flavor. It pairs wonderfully with mashed potatoes, steamed vegetables, or a side salad.
