Ingredients
6 BELL PEPPERS
½ CUP COOKED RICE (White or Brown)
2 TBSP OLIVE OIL OR COOKING OIL
2 TBSP TOMATO PASTE
3 CLOVES OF GARLIC, DICED
1 LARGE ONION (SLICED)
1 LB MINCED BEEF
I CAN DICED TOMATOES (OR 10 FRESH CHOPPED LARGE TOMATOES)
1 ½ TSP OREGANO POWDER
I CUP SHREDDED CHEDDAR OR OTHER CHEESE
SALT & PEPPER TO TASTE
PARSLEY FOR TOPPING (OPTIONAL)
Instructions
Prep the peppers by removing the tops and then taking out the seeds and core. Now, place them aside while you cook the filling.
In a large pan, heat the olive or cooking oil. Add the sliced onions and sauté until softened (about 5 mins). Add tomato paste and garlic and continue stirring.
Add the mince and cook until brown (usually around 5-6 mins). Drain any excess fat or moisture.
Add rice, diced tomatoes, salt, pepper, and oregano. Mix well and cook for another 5 minutes (until liquid is reduced).
Now place the bell peppers on a baking tray, drizzle with oil, and fill with the rice and beef mixture.
Top the peppers with cheese and cover with foil. Bake in the oven on medium heat for 30-35 minutes until the peppers are cooked.
Then remove the foil and let the cheese bake into a delicious crunchy top.
Finish the peppers with a dash of parsley (if adding) and serve hot. The baked stuffed peppers are so easy to make and so delicious to taste they will become your weekend meal of choice.

Can I skip the meat and add some other filling?
If you would rather not add meat, create a savory filling with onions, diced mushrooms, and rice. Or add different combinations of vegetables, such as potatoes, peas, etc., to make a tasty filling.

Yes, these will stay fine in the fridge, and you can just heat them again in the oven before serving.
