Ingredients

⦁ 4 tablespoons of Olive Oil

⦁ 3 cloves of Garlic, minced

⦁ 1 small Onion, peeled and sliced

⦁ 250 gms of MUSHROOs thinly sliced

⦁ ½ teaspoon of dried Thyme

⦁ ½ teaspoon of dried Oregano or Rosemary

⦁ ½ teaspoon of Chili flakes

⦁ Salt and Pepper to taste.

⦁ ¼ cup of yellow Cornmeal or extra flour for dusting the pizza stone or pan

⦁ ½ pound of pizza dough (store-bought or homemade)

⦁ 8 ounces of Mozzarella cheese, grated (approximately 2 cups)


Instructions

1. Preheat the Oven

⦁ Place the pizza stone/baking sheet in the oven and preheat it to 450-500°F. Preheat the oven for at least 30 minutes.

⦁ Take the pizza dough from the fridge and let it reach room temperature.

2. Prepare the Flavorful MUSHROOs

⦁ Begin by putting 2 tablespoons of olive oil in a large skillet over medium-high heat.

⦁ Add the MUSHROOs, shallots, chili flakes, garlic, thyme, and oregano.

⦁ Sauté the mixture, occasionally stirring, until the MUSHROOs are tender, brown, and flavorful (about 5-6 minutes).

⦁ Sprinkle with salt and pepper or a little splash of vinegar. Continue cooking until it has evaporated and the MUSHROOs are beautifully caramelized (approximately 3-5 minutes).

3. Prepare the Pizza Base
