Description

Ingredients

2 cups white button MUSHROOs (sliced)

1 small bell pepper, diced

3 tbsp cooking oil

1 cinnamon stick

4 green cardamom pods

3 cloves

1 bay leaf

1 tsp cumin

2 small onions, finely sliced

1 tbsp ginger & garlic paste

2 tomatoes, puréed

8–10 cashews, blended with a little water

½ cup yoghurt (whisked)

½ tsp turmeric powder

2 tsp red chili powder

1 tsp coriander

1 tsp cumin powder

Salt to taste

½ tsp sugar

1 small onion, diced

1½ cups water

1 tsp garam masala

¼ cup kasuri methi (lightly dry roasted & crushed)

2 tbsp fresh cream

For Garnish:

1 inch ginger, julienne

Fresh coriander leaves (handful)


Instructions

  • Heat the oil in a pan and add cardamom, cloves, cinnamon, bay leaf & cumin seeds until they crackle.
  • Add sliced onions and sauté until golden.
  • Add ginger & garlic paste and cook until fragrant.
  • Add tomato purée and cook until the oil separates.
  • Stir in cashew paste and whisked yoghurt. Cook on low flame for 2–3 minutes.
  • Add turmeric, chili & coriander powder, cumin powder, salt & sugar. Mix well.
  • Add mushrooms, diced onion & capsicum. Sauté for 2-3 minutes.
  • Pour in the water, cover, and cook for about 8–10 minutes, until the mushrooms are tender.
  • Add the Garam Masala, Kasuri Methi & cream and mix gently.
  • Simmer for 2 minutes, garnish with ginger juliennes & coriander.
  • Serve piping hot with naan or white rice.
