This hearty and wholesome dish is easy to make and perfect for lunch or brunch. So, whether you love soup, pasta, or both, this combo recipe will thrill the whole family!

- 500gms MUSHROOs
- 2 tablespoons cooking oil
- 1 ¼ cup penne or other pasta
- 1 onion, diced
- 3 cloves of garlic, chopped
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 6 cups chicken or vegetable broth
- 1 teaspoon soy sauce (optional)
- 1/2 cup sour or whipping cream
- 1/2 cup cheese grated (parmesan or other)
- Salt and pepper to taste
Instructions
- Slice the MUSHROOs and then add to the cooking oil in a frying pan or dish over medium heat.
- Add the onions and cook until tender or about 15 minutes.
- Add the garlic/thyme and cook for around a minute or so.
- Add the broth (chicken or vegetable), soy sauce, and pasta.
- Bring the dish to a boil, reducing the heat, and simmering until the pasta is soft (approx. 8 minutes).
- Turn the heat off, then add the grated cheese & cream, mix, and let it melt into the broth.
- Season with salt and pepper as required.
