- 500 gms MUSHROOs (sliced)
- 8 large eggs
- 1 ½ tbsp olive oil (or butter)
- ¼ tsp salt and pepper each
- ¼ tsp thyme powder
- ½ cup onions, thinly sliced
- ½ cup grated cheese (parmesan or cheddar)
- ½ cup sour cream (optional)
Instructions
- Preheat your oven (to 300 degrees), then add a 9-inch pie dish or Pyrex pan to heat.
- Add the olive oil or butter and mushrooms to a frying pan. Fry until golden brown and all the liquid has evaporated (usually takes 10 mins or so).
- Beat the eggs well, then add the salt, pepper, thyme, and sour cream if used. Then add the cheese and onions, mixing them well.
- Take out the preheated dish from the oven, place it on a heat-proof surface, and add a bit of olive oil/butter to the base and sides of the pan.
- Add the mushrooms to the pan, followed by the egg mixture. Stir slightly, and then add the pan back into the oven.
- Let the Mushroom Frittata cook until the edges of the egg are brown and the Frittata is firm to the touch. This will take about 20-25 minutes.
- Once it’s ready, let the Mushroom Frittata cool for ten minutes, and then serve it warm in slices. It is the perfect weekend meal with a green salad or toasted bread.
