Description

Perfect for lunch or a weekend brunch, this easy Mushroom Frittata recipe will become your favorite in no time. This Frittata is tasty, filling, and healthy with a few simple ingredients and easy prep. It’s low in carbs and gluten-free, too.


Ingredients

  • 500 gms MUSHROOs (sliced)
  • 8 large eggs
  • 1 ½ tbsp olive oil (or butter)
  • ¼ tsp salt and pepper each
  • ¼ tsp thyme powder
  • ½ cup onions, thinly sliced
  • ½ cup grated cheese (parmesan or cheddar)
  • ½ cup sour cream (optional)

 


Instructions

  1. Preheat your oven (to 300 degrees), then add a 9-inch pie dish or Pyrex pan to heat.
  2. Add the olive oil or butter and mushrooms to a frying pan. Fry until golden brown and all the liquid has evaporated (usually takes 10 mins or so).
  3. Beat the eggs well, then add the salt, pepper, thyme, and sour cream if used. Then add the cheese and onions, mixing them well.
  4. Take out the preheated dish from the oven, place it on a heat-proof surface, and add a bit of olive oil/butter to the base and sides of the pan.
  5. Add the mushrooms to the pan, followed by the egg mixture. Stir slightly, and then add the pan back into the oven.
  6. Let the Mushroom Frittata cook until the edges of the egg are brown and the Frittata is firm to the touch. This will take about 20-25 minutes.
  7. Once it’s ready, let the Mushroom Frittata cool for ten minutes, and then serve it warm in slices. It is the perfect weekend meal with a green salad or toasted bread.
