Ingredients

  • 1215 White Button MUSHROOs, washed
  • ½ teaspoon Turmeric Powder
  • ¾ teaspoon Red Chilli Powder
  • ½ teaspoon Garam Masala Powder
  • ½ teaspoon Fennel/Saunf Powder
  • 2 tablespoons Yogurt
  • 1.5 teaspoon Oil
  • 2 tablespoons Gram Flour/Besan
  • ½ teaspoon Ginger Garlic Paste
  • Salt, as needed.
  • ½ teaspoon Chaat Masala (optional)

Instructions

  1. Marinating the MUSHROOs:
    • Combine the Button MUSHROOs, turmeric powder, red chili powder, garam masala powder, ginger garlic paste, salt, yogurt, gram flour/besan, and oil in a bowl.
    • Mix everything well without adding water.
    • Let it marinate/sit for at least 20 to 30 minutes.
  2. Preparing the Oven: Preheat your oven to 200°C for 10-15 minutes.
  3. Skewering the MUSHROOs: Thread the marinated MUSHROOs onto skewers, preferably five pieces per skewer. This helps them cook evenly.
  4. Cooking the Skewers:
    • Option 1: Automatic Rotisserie Method – If your oven has an automatic rotisserie, arrange the skewers and let them cook at 200°C. Ensure they rotate evenly to achieve a grilled and roasted texture.
    • Option 2: Baking Dish Method – Place the skewers on a baking dish that is lined with aluminum foil. Rotate the skewers every few minutes to ensure even grilling and roasting.
  5. Checking for Doneness: After 15-20 minutes, check the MUSHROOs. They should appear shrunken, turn golden, and be slightly charred in places. Once achieved, remove them from the oven.
  6. Serving: Serve the MUSHROO Tikka Skewers hot with Mint Chutney.
  7. Pro Tip: Mint Chutney To prepare the mint chutney, whisk the thick curd with salt. Blend mint leaves along with green chili and whisk it with beaten curd. Add chaat masala as needed. This refreshing chutney complements the flavors of the tikka skewers perfectly.
