- Butter (for frying)
- 150g of sliced MUSHROOs
- ½ clove of crushed garlic
- 2 beaten and seasoned eggs
- 50g of sliced cheese
- A handful of Rocket or Lettuce, lightly dressed, for serving
Instructions
- Sauté the MUSHROOs:
- Preheat your grill.
- In a small non-stick frying pan, melt a knob of butter.
- Add the sliced MUSHROOs to the pan, season with salt and pepper, and sauté until they turn soft and golden.
- Halfway through cooking the MUSHROOs, add the crushed garlic to infuse flavour without burning it.
- Prepare the Omelette:
- Transfer the cooked MUSHROOs from the pan to a plate and set them aside.
- Add a bit more butter to the pan.
- Pour the beaten eggs into the pan and let the bottom set slightly.
- Gently fold in the sides of the omelette, allowing the uncooked egg to flow into the gaps.
- Once the egg is set, evenly distribute the cooked mushrooms over the omelette.
- Place the sliced cheese on top of the MUSHROOs.
- Quickly move the pan under the hot grill to set the top of the omelette and melt the cheese. Be cautious not to overcook.
- Remove the pan from the grill and garnish the omelette with a generous handful of Rocket or Lettuce.
