Creamy MUSHROO Cauliflower Soup

Ingredients

  • 1/3 cup mushrooms
  • 2 cups cauliflower florets
  • 2 cups almond milk
  • 2 tbsp butter or ghee
  • 2 cloves garlic, crushed
  • 1 onion, finely chopped
  • 300 g button mushrooms
  • 1 tsp thyme
  • Salt and pepper to taste
  • 3 cups vegetable stock

Instructions

  1. Soak the white button mushrooms in boiling water for about 20 minutes.
  2. Drain the mushrooms, roughly chop them, and reserve the soaking water.
  3. In a large pot, combine cauliflower florets, 1 cup almond milk, and the reserved mushroom soaking water. Cook on medium heat.
  4. Cover the pot and steam the cauliflower for about 10 minutes until tender.
  5. Transfer the steamed cauliflower mixture to a blender and blend until smooth. Set aside.
  6. In the same pot, add butter or ghee and sauté garlic and chopped onion for 3–4 minutes until golden.
  7. Add chopped mushrooms, thyme, salt, and pepper. Cook for about 10 minutes until the mushrooms soften.
  8. Add the cauliflower puree and vegetable stock to the pot.
  9. Cover and simmer the soup for about 20 minutes to allow the flavors to combine.
  10. Blend briefly to reach your desired consistency (blend less if you prefer a chunkier soup).
  11. Pour the soup into bowls and garnish with fresh thyme.
