Creamy MUSHROO Cauliflower Soup

Ingredients
- 1/3 cup mushrooms
- 2 cups cauliflower florets
- 2 cups almond milk
- 2 tbsp butter or ghee
- 2 cloves garlic, crushed
- 1 onion, finely chopped
- 300 g button mushrooms
- 1 tsp thyme
- Salt and pepper to taste
- 3 cups vegetable stock
Instructions
- Soak the white button mushrooms in boiling water for about 20 minutes.
- Drain the mushrooms, roughly chop them, and reserve the soaking water.
- In a large pot, combine cauliflower florets, 1 cup almond milk, and the reserved mushroom soaking water. Cook on medium heat.
- Cover the pot and steam the cauliflower for about 10 minutes until tender.
- Transfer the steamed cauliflower mixture to a blender and blend until smooth. Set aside.
- In the same pot, add butter or ghee and sauté garlic and chopped onion for 3–4 minutes until golden.
- Add chopped mushrooms, thyme, salt, and pepper. Cook for about 10 minutes until the mushrooms soften.
- Add the cauliflower puree and vegetable stock to the pot.
- Cover and simmer the soup for about 20 minutes to allow the flavors to combine.
- Blend briefly to reach your desired consistency (blend less if you prefer a chunkier soup).
- Pour the soup into bowls and garnish with fresh thyme.
