Chicken with Creamy Mushroom Sauce

Description
Chicken with Creamy Mushroom Sauce is a delicious dish featuring tender, juicy chicken breasts smothered in a rich creamy sauce made with sautéed white button mushrooms, garlic and herbs.
Ingredients
Crispy Chicken
- 2 large chicken breasts (600–700g)
- ½ tsp salt
- Black pepper
- ¼ cup flour
- 1 tbsp butter
Mushroom Sauce
- 2 tbsp butter
- 300g white button mushrooms (sliced)
- 2 garlic cloves (minced)
- ¾ cup chicken or vegetable stock
- 1 cup heavy cream
- ½ cup freshly grated parmesan
For Serving
- 2 tbsp chives (optional)
Instructions
- Cut each chicken breast horizontally to make 4 thin steaks.
- Season with salt and pepper, then lightly coat with flour.
- Cook in butter over medium-high heat for 2–3 minutes per side until golden. Remove and keep warm.
- In the same pan, melt butter and sauté mushrooms until golden.
- Add garlic and cook for 1 minute.
- Add stock and let it reduce slightly.
- Add cream and simmer 2 minutes until thickened.
- Stir in parmesan and adjust seasoning.
- Return chicken to pan, spoon sauce over, garnish with chives and serve.
Notes
Chicken: Large breasts work best as they slice evenly and cook quickly.
Cream: Full-fat heavy cream gives the richest result.
Parmesan: Grate fresh from a block for smooth melting.
